In a significant contribution to the field of food science and human health, Vice Chancellor Prof. Dinesh Chandra Rai of Baba Bhimrao Ambedkar University, Muzaffarpur, has led pioneering research on the utilization of pigmented rice in functional dairy products.

Formerly a Senior Professor at Banaras Hindu University (BHU), Varanasi, Prof. Rai has been a driving force behind groundbreaking research on the bioactive compounds found in pigmented rice varieties, such as black rice. His research, conducted in collaboration with Dr. Saloni, a research scholar at BHU, has explored the potential of these unique grains to enhance the nutritional value of dairy products.

Dr. Saloni's research, focusing on the Chak-Hao variety of black rice (a GI-tagged product from Manipur), has demonstrated the feasibility of incorporating black rice extract into low-calorie functional ice cream. This innovative approach not only adds a unique flavor and color but also significantly enhances the ice cream's nutritional profile with antioxidants and other beneficial compounds.

A team of distinguished researchers, led by Vice Chancellor Prof. Dinesh Chandra Rai, Dr. Saloni, Dr. Raj Kumar Duary, and Dr. Rakesh Kumar Singh, has published a significant review paper in the prestigious Journal of Food and Bioprocess Technology (Impact Factor 5.3).

The paper, titled "Bio‑functional Compounds in Pigmented Rice: Recent Updates on Extractions, Delivery Mode, and Application in Food Systems," delves into the critical aspects of harnessing the nutritional potential of pigmented rice varieties. This research highlights the immense potential of pigmented rice varieties to improve human health by addressing various metabolic disorders.
